Whole Wheat Stevia Chocolate Chip Cookies
- 1 cup Butter (or Butter Substitute), Softened
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1/4 teaspoons Stevia Powder Extract
- 1-1/2 cup Whole Wheat Flour
- 1/2 cups Unblanched Almond Meal
- 1 Tablespoon Flaxseed Meal (optional)
- 3/4 teaspoons Salt
- 3/4 teaspoons Baking Powder
- 1-1/4 cup Mini Chocolate Chips
- 1. Preheat oven to 350u0b0F.
- 2. Cream the butter until fluffy; then mix in egg, vanilla, and Stevia extract. Set aside.
- 3. In another bowl, mix flour, almond meal, flax, salt, and baking powder.
- 4. Combine the two mixtures until blended, then add chocolate chips.
- 5. Roll into cookie dough balls and place on baking sheets, flattening them out after dropping them onto the sheet.
- 6. Bake for about 10 minutes!
