Golden Fruit Cake
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- 1 c. chopped dates
- 3/4 c. coconut
- 1 1/2 c. golden raisins
- 1 c. chopped pecans
- 1/2 lb. candied citron
- 1/2 c. shortening
- 1 c. sugar
- 2 c. plain flour
- 2 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. sweet milk
- 1/2 tsp. almond extract
- 4 egg whites, stiffly beaten but not dry
- Chop and dredge all fruits and nuts with flour.
- Cream together shortening and sugar.
- Sift flour, baking powder, and salt.
- Add dry ingredients to creamed mixture with sweet milk. Add almond extract, fold in dredged fruit and nuts.
- Fold in carefully, egg whites.
- Pour into greased 10-inch Bundt pan.
- Bake 2 hours at 275u0b0.
