Cranberry-White And Dark Chocolate Cookies
- 1 stick Unsalted Butter, Room Temperature
- 1-1/3 cup Sugar
- 2 Large Eggs
- 2-1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1/8 teaspoons Baking Soda
- 1 cup White Chocolate Chips
- 1 cup Dark (or Semi-sweet) Chocolate Chips
- 1 cup Dried Cranberries
- Preheat oven to 350 degrees F.
- Cream the butter in a mixing bowl using a mixer, about 2 minutes. Add sugar and beat on medium speed until light and fluffy. Add eggs, one a time, making sure it is incorporated fully before adding the next one.
- Add flour, baking powder, salt, and baking soda to creamed mixture. Mix on low speed until it is all incorporated.
- Add the chips and cranberries and mix on low until just dispersed.
- Using a cookie scoop, drop cookies onto a cookie sheet and bake for 10-12 minutes, or until lightly browned. Cool on wire rack.
- Yields: 3 dozen cookies
