Spiced Peach Nog Cobbler

  1. Preheat oven to 400u0b0F.
  2. In a medium bowl, add the peaches, nog, arrowroot powder, sweetener, vanilla and spices and mix well. Pour peach mixture into a 9x9 glass pan.
  3. Prepare the dough mixture. Add the flour, baking powder, sugar and salt in a medium bowl. Using a pastry cutter, cut the vegetable shortening into the flour until the mixture looks like wet sand. Mix the flax seed meal and warm water to make a flax seed "egg" and set aside for 3-5 minutes. You can also use a regular egg. Add the "egg" and nog coconut milk and mix until well combined.
  4. Add the dough in lumps on top of the peach mixture. Sprinkle sugar over the dough. Bake your cobbler for 20-25 minutes until the dough is golden. Cool for a bit and serve with a glass of Nog coconut milk or with So Delicious vanilla bean ice cream.
