Spiced Peach Nog Cobbler
- FOR THE PEACH MIXTURE:
- 16 ounces, fluid Bag Frozen Peaches
- 2 Tablespoons So Delicious Coconut Milk Nog Or Egg Nog
- 2 Tablespoons Arrowroot Powder, Or Cornstarch
- 1/2 cups Agave Nectar Or Other Sugar
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1/4 teaspoons Nutmeg
- 1/4 teaspoons Ground Ginger
- 1/4 teaspoons Ground Cloves
- FOR THE DOUGH:
- 1 cup Whole Wheat White Flour
- 1/2 Tablespoons Baking Powder
- 2 Tablespoons Sugar, Plus More To Sprinkle Over The Dough
- 1/4 teaspoons Salt
- 1/4 cups Vegetable Shortening Or Coconut Oil
- 1 Tablespoon Flaxseed Meal
- 3 Tablespoons Warm Water
- 1/4 cups So Delicious Coconut Milk Nog Or Egg Nog
- Preheat oven to 400u0b0F.
- In a medium bowl, add the peaches, nog, arrowroot powder, sweetener, vanilla and spices and mix well. Pour peach mixture into a 9x9 glass pan.
- Prepare the dough mixture. Add the flour, baking powder, sugar and salt in a medium bowl. Using a pastry cutter, cut the vegetable shortening into the flour until the mixture looks like wet sand. Mix the flax seed meal and warm water to make a flax seed "egg" and set aside for 3-5 minutes. You can also use a regular egg. Add the "egg" and nog coconut milk and mix until well combined.
- Add the dough in lumps on top of the peach mixture. Sprinkle sugar over the dough. Bake your cobbler for 20-25 minutes until the dough is golden. Cool for a bit and serve with a glass of Nog coconut milk or with So Delicious vanilla bean ice cream.
