Savory Stuffed Vidalia Onions

  1. Steam Vidalia onions by wrapping each one in a damp paper towel.
  2. Microwave at 100% for about 10 minutes or until tender. Spoon out inside pulp, leaving three outer layers of onions.
  3. You should have a circular opening.
  4. Place in a casserole dish.
  5. Set aside.
  6. Combine all other ingredients except garnish.
  7. Place stuffing mixture equally into each of the steamed Vidalias. Microwave for 2 to 3 minutes at 100% until well heated.
  8. Garnish each Vidalia onion with 5 boiled shrimp around top edge of onion. Sprinkle center with parsley.
  9. Serves 4.
