Mississippi Mud Brownies
- FOR THE BROWNIE:
- 4 ounces, weight Unsweetened Chocolate
- 1 cup Butter
- 2 cups Sugar
- 1 cup All-purpose Flour
- 1/8 teaspoons Salt
- 4 whole Eggs
- 1 cup Chopped Pecans
- FOR THE ICING:
- 2 ounces, weight Unsweetened Chocolate
- 1/2 cups Butter
- 1/2 cups Evaporated Milk
- 1/2 teaspoons Vanilla
- 5 cups Powdered Sugar
- 4 cups Mini Marshmallows
- Preheat oven to 350 degrees F.
- Melt the unsweetened chocolate with 1 cup of butter. You can do this in a saucepan over low heat. Once it's melted, remove it from the heat and set aside.
- Into a mixing bowl add sugar, flour and salt. Pour the melted chocolate into the flour mixture and mix to combine. Then add the eggs one at a time. Fold in pecans.
- Place the mixture into a 9x12 greased baking pan. Bake at 350 degrees F for 25 to 30 minutes.
- While the brownie is baking, melt 2 squares of chocolate with 1/2 cup of butter in the same saucepan over low heat. Once melted, add milk and heat until hot. (Don't let it come to a full boil.) Remove from heat and add vanilla and powdered sugar. Mix everything together with a mixer.
- Remove brownie from oven and immediately cover it with the marshmallows. Then pour the icing over the marshmallows.
- Let cool before cutting. Garnish with pecans if you like.
- Makes 12 servings.
