Pumpkin Apple Bread
- 1 cup Whole Wheat Pastry Flour
- 1/2 cups Rolled Oats
- 1 teaspoon Baking Soda
- 1/2 cups Brown Sugar
- 1 whole Egg
- 1 whole Egg White
- 1 cup Pumpkin (not Pumpkin Pie Filling)
- 1/2 cups Unsweetened Applesauce
- 1 teaspoon Cinnamon
- 1/4 teaspoons Ground Cloves
- 1/4 teaspoons Pumpkin Spice
- 1/2 cups Apple, Peeled, Cored And Diced
- Preheat oven to 350u0b0F.
- Mix together flour, oats, baking soda and brown sugar. Add your egg, egg white, pumpkin, applesauce and spices and mix until combined, but don't over mix. Gently fold in apples.
- Pour into three mini bread pans or 1 loaf pan.
- Bake mini pans for about 30 minutes. Check with a toothpick to make sure it comes out not wet. If using a large loaf pan, bake for about 50 minutes.
- Makes 16 large slices or 18 mini loaf pan slices.
