“Bran Muffin” Squares
- 1/2 cups Butter
- 3/4 cups Brown Sugar
- 2 Tablespoons Honey
- 2 teaspoons Vanilla
- 1/4 teaspoons Salt
- 4 ounces, weight Apple Sauce
- 3 whole Eggs
- 1/2 cups All-purpose Flour
- 2 cups Wheat Germ
- 1 cup Quick Oats
- Cream together the butter and sugar. Add honey, vanilla, salt, apple sauce and eggs as you continue mixing. Mix in flour, wheat germ and oats.
- Spread the mixture into a pre-greased pan - 8"x8" or similar. Preheat oven to 325F. I only had a 6"x8" glass pan so my baking time was longer. I baked mine for 60 minutes checking every 15 minutes for doneness. If you use a larger pan, the cake won't be as thick - so you'll probably bake for less time. Press lightly in the centre to see if it bounces back or is still squishy being careful not to dry them out.
