Grilled Watermelon With Feta, JalapeƱos And Honey
- 2 whole 1-inch Thick Sliced Rounds From A Baby Watermelon
- 1/2 Tablespoons Extra Virgin Olive Oil
- 1/2 whole Lime, Juiced
- 1 pinch Kosher Salt
- 1 pinch Fresh Ground Pepper
- 1 whole Very Small Jalapeno, Thinly Sliced Into Rounds (feel Free To Seed The Jalapeno If You're Not Into Spicy)
- 3 Tablespoons Fresh Cilantro Leaves
- 2 ounces, weight Crumbled Feta Cheese
- 2 teaspoons Honey
- Cut each slice of watermelon into fourths. Brush both sides of the watermelon with olive oil and season with kosher salt and fresh ground pepper.
- Heat a grill or grill pan over medium-high heat. When hot, add the watermelon and cook for about 2 minutes on each side until pretty grill marks appear. Remove from the pan and let cool slightly.
- Arrange the watermelon on a serving platter (or on individual plates) and drizzle with lime juice. Add salt and pepper. Add the jalapenos and cilantro, and sprinkle with the cheese. Drizzle the whole shebang with honey and serve immediately.
