Five-Minute Pumpkin Pie Oatmeal
- FOR THE OATMEAL:
- 1/2 cups Quick Cooking Oats
- 1/2 cups Water
- 1/2 cups Milk (any %)
- 1/4 cups Canned Pure Pumpkin
- 1 Tablespoon Light Brown Sugar
- 1 teaspoon Vanilla Extract
- 1/2 teaspoons Pumpkin Pie Spice
- 1 pinch Salt
- FOR THE TOPPING:
- 1 Tablespoon Pure Pumpkin
- 1 teaspoon Light Brown Sugar
- 2 Tablespoons Dried Cranberries
- 1 pinch Fresh Ground Nutmeg
- For the oatmeal: Thoroughly combine quick cooking oats, water, milk, pumpkin, sugar, vanilla, spice and salt in a microwave-safe bowl. Microwave on high for 1 1/2 to 2 minutes.
- For the topping: Combine the pumpkin with light brown sugar in a small bowl. Serve a dollop over the oatmeal. If desired mix in a few Craisins and a sprinkle of nutmeg or pumpkin pie spice.
