Five-Minute Pumpkin Pie Oatmeal

  1. For the oatmeal: Thoroughly combine quick cooking oats, water, milk, pumpkin, sugar, vanilla, spice and salt in a microwave-safe bowl. Microwave on high for 1 1/2 to 2 minutes.
  2. For the topping: Combine the pumpkin with light brown sugar in a small bowl. Serve a dollop over the oatmeal. If desired mix in a few Craisins and a sprinkle of nutmeg or pumpkin pie spice.
