Pumpkin Spice Muffins
- 2 cups All-purpose Or Whole Wheat Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 teaspoons Cinnamon
- 1 teaspoon Ground Ginger
- 1/2 teaspoons Cardamom
- 1/4 teaspoons Ground Cloves
- 1/4 teaspoons Ground Nutmeg
- 4 whole Eggs
- 2 cups Pumpkin Puree
- 1 cup Brown Sugar
- 1 container (111g Size) Unsweetened Applesauce
- 1 cup Wheat Germ
- Pumpkin Seeds (optional)
- Preheat oven to 350u0b0F and line muffin tins.
- In one bowl, mix together flour, baking powder, baking soda, salt, and spices.
- In a second bowl, mix together eggs, pumpkin, brown sugar, and applesauce.
- Stir dry into wet ingredients. When almost mixed, add wheat germ and incorporate.
- Scoop into muffin liners. Sprinkle on pumpkin seeds (optional). Bake for 20 minutes or until inserted toothpick comes out clean.
