Pumpkin Roll Out Cookies

  1. 1. Preheat oven to 375u0b0F.
  2. 2. In a large mixing bowl, combine the butter, brown sugar and orange zest with an electric mixer.
  3. 3. Add the pumpkin, egg yolk, and vanilla.
  4. 4. Gradually add the flour and spices.
  5. 5. Mix with your hands to create a soft dough.
  6. 6. Wrap in plastic and refrigerate for 30-60 minutes.
  7. 8. Roll out each piece to 1/8-inch thickness on a floured surface. If you want thicker cookies, don't roll the dough out as much. Cut out cookies.
  8. 9. Cook at 375u0b0F for 15-20 minutes. Frost with your favorite frosting when cooled. I used Trader Joe's white frosting and it was wonderful!
