Pumpkin Roll Out Cookies
- 3/4 cups Real Butter
- 1/2 cups Brown Sugar, Packed
- 1 Tablespoon Orange Zest
- 1/2 cups Canned Pumpkin Pie
- 1 whole Egg Yolk
- 1 teaspoon Pure Vanilla
- 1-1/4 cup Flour
- 1/4 teaspoons Cinnamon
- 1/4 teaspoons Ginger
- 1/4 teaspoons Nutmeg
- Your Favorite Cookie Frosting
- 1. Preheat oven to 375u0b0F.
- 2. In a large mixing bowl, combine the butter, brown sugar and orange zest with an electric mixer.
- 3. Add the pumpkin, egg yolk, and vanilla.
- 4. Gradually add the flour and spices.
- 5. Mix with your hands to create a soft dough.
- 6. Wrap in plastic and refrigerate for 30-60 minutes.
- 8. Roll out each piece to 1/8-inch thickness on a floured surface. If you want thicker cookies, don't roll the dough out as much. Cut out cookies.
- 9. Cook at 375u0b0F for 15-20 minutes. Frost with your favorite frosting when cooled. I used Trader Joe's white frosting and it was wonderful!
