Baked Beans
- 1 1/2 c. dried beans
- 1/4 c. chopped onions
- 2 Tbsp. dark molasses
- 2 or 3 Tbsp. catsup
- 1 Tbsp. dry mustard
- 1 tsp. salt
- 1/2 c. boiling water or beer
- 1/2 tsp. vinegar
- 1 tsp. curry powder
- 1 Tbsp. Worcestershire sauce
- 1/4 lb. sliced salt pork
- Cover beans with water and bring to a boil.
- Simmer slowly for 1/2 hour or more until tender.
- Preheat oven to 250u0b0.
- Drain the beans, reserve the cooking water and add onions, molasses, catsup, dry mustard, salt, bean water or beer, vinegar, curry powder and Worcestershire sauce.
- Place in a greased casserole.
- Decorate with sliced salt pork.
- Bake covered for 6 to 9 hours.
- If they become dry, add well seasoned stock or reserved bean water.
- Uncover for the last hour of cooking.
