Specialty Salad Lunch For One – Made With Leftovers
- 1 bag (about 5 Oz. Size) Salad Greens, Your Choice
- 1/2 cups Leftover Meat From The Dinner The Night Before
- 1/2 cups Salad Toppings Of Your Choice
- Salad Dressing Of Your Choice
- At the beginning of the week, I try to have lettuce greens on hand. This recipe is so versatile. Almost any meal you have for dinner makes a great start for a healthy, tasty and inexpensive salad. Have the salad for lunch at work or while the kids are having their usual lunch.
- Last night we had shredded chicken tacos. I reserved about 1/2 cup of chicken and put it in the fridge for lunch the next day. The next day, I put some lettuce on my plate then added the cold chicken and the left-over toppings that we used for the tacos: black beans, salsa, red onions, cheddar cheese and tortilla chips.
- Other options include:
- - Cut-up pork loin, sesame dressing, mandarin oranges, toasted slivered almonds.
- - Grilled salmon, fresh fruit, dressing, toasted walnuts.
- As you can see, the options are endless. I just wish I would have thought of this years ago. No more frozen entrees at work or hot dogs with the kids for me!
