Pumpkin Walnut Oat Muffins With Cinnamon Maple Glaze
- FOR THE MUFFINS:
- 1-1/2 cup White Whole Wheat Flour
- 1 cup Rolled Oats
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Sea Salt
- 1 teaspoon Pumpkin Pie Spice
- 1/2 cups Brown Sugar
- 3 Tablespoons Maple Syrup
- 1 whole Egg
- 1 cup Pureed Pumpkin
- 1 whole Banana, Mashed
- 1/2 cups Milk
- 1/2 cups Walnuts, Chopped
- FOR THE CINNAMON MAPLE GLAZE:
- 1/4 cups Maple Syrup
- 1/4 cups Nonfat Vanilla Yogurt
- 3 Tablespoons Milk
- 1/2 teaspoons Cinnamon
- Preheat oven to 375u0b0F. Spray a standard muffin tin with cooking spray. Set aside.
- In a large bowl combine all dry ingredients (flour, oats, baking powder, baking soda, salt, pumpkin spice, brown sugar).
- In a medium bowl combine all remaining muffin ingredients, except walnuts. Whisk well to combine.
- Pour wet mix into dry mixture and combine well. Fold in walnuts. Pour into muffin tin.
- Bake 20 minutes or until a toothpick inserted comes out clean. Cool on wire rack 10 minutes.
- Meanwhile make the cinnamon glaze. Whisk syrup, yogurt, milk, and cinnamon together. Drizzle on muffins.
