Banana Macaroon Granola

  1. Preheat oven to 325u0b0F. Line a baking sheet with parchment paper, or grease with cooking spray In a large bowl, stir together dry ingredients. In a medium sized bowl, mix together the wet ingredients.
  2. Add wet mixture to dry mixture and stir well until everything is coated. Scoop onto baking sheet and spread out. (Or for chunkier granola, press firmly into the pan and do not stir during baking. Break apart into chunks when cool.)
  3. Bake for 20-25 minutes, or until light golden, stirring once halfway through baking. Allow to cool. Makes about 5 cups. Store in an airtight container for 1-2 months.
