Beautiful Pumpkin Cookies
- 1 cup Unsalted Butter, Softened
- 1 cup Sugar
- 1 cup Canned Pumpkin Puree
- 1 whole Egg
- 1 teaspoon Vanilla
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg, Freshly Grated
- 1 cup Raisins
- 1 cup Walnuts, Chopped
- Preheat oven to 350u0b0F.
- Cream butter and sugar until fluffy in a standup mixer with a paddle attachment. Add pumpkin, egg and vanilla and mix well.
- Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add in batches to the pumpkin mixture. Remove bowl from mixer and stir in raisins and nuts.
- Drop by teaspoonfuls onto Silpat or parchment paper-lined cookie sheets about 2 inches apart. Push the cookie down slightly with your fingers.
- Bake for 16-20 minutes or until golden. Cool on a cooling rack.
