Funfetti Brownies With Pistachios
- 3 ounces, weight High Quality Unsweetened Chocolate
- 4 ounces, weight Butter (four Ounces Is One Stick), Plus Extra For Greasing Your Pan
- 1-1/3 cup Sugar
- 2 whole Large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 teaspoons Sea Salt
- 2/3 cups All-purpose Flour
- 1/2 cups Shelled Pistachios, Chopped If Desired
- 1 jar Sprinkles, 5 Ounce Jar, Use As Desired
- Preheat the oven to 350u0b0F and line an 8x8 pan with foil or parchment. Spray it with cooking spray or rub it with a bit of butter for good measure.
- Put the chocolate and butter into the top of a double boiler. Once water is simmering, stir the butter and chocolate together, removing the bowl from the heat when there are only small chunks of butter left. Allow the mixture to cool for a minute or two.
- Then whisk in the sugar. Then whisk in the, eggs one at a time. Then whisk in the vanilla and salt. Fold in the flour and pistachios (you can chop them up first if you want).
- Pour the prepared batter into the pan. Smooth it so it's even. Cover the top with a liberal layer of sprinkles.
- Bake for 25 minutes. With about 5 minutes left start checking by inserting a toothpick into the center. They are done when the toothpick comes out clean.
- Remove it from the oven and allow to cool fully before cutting if you can be so patient. Throw them in the fridge for an even faster cooling (this seems to make them taste fudgier). Devour.
