Pumpkin Spice Latte Granola
- 3-1/2 cups Rolled Oats
- 1-1/2 cup Dried Cranberries
- 1 cup Pecans, Chopped
- 1/4 cups Flax Seeds
- 1/4 cups Applesauce
- 1/2 cups Pumpkin Puree
- 1 teaspoon Vanilla Extract
- 1/4 cups Maple Syrup
- 1/2 cups Brown Sugar
- 1-1/2 Tablespoon Freshly Ground Coffee
- 1/2 teaspoons Salt
- 2 Tablespoons Pumpkin Pie Spice
- 1 Tablespoon Canola Oil
- 1. Preheat oven to 350 F.
- 2. Combine the oats, cranberries, pecans, and flax seeds in a large bowl.
- 3. In another bowl, mix the applesauce, pumpkin puree, vanilla, maple syrup, brown sugar, ground coffee, salt and pumpkin pie spice.
- 4. Gently stir the wet ingredients into the dry ingredients. Drizzle with oil until evenly coated.
- 5. Spread on a foil-lined baking sheet and bake for 35-40 minutes, stirring every 10 minutes, until golden brown.
