Pumpkin Spice Latte Granola

  1. 1. Preheat oven to 350 F.
  2. 2. Combine the oats, cranberries, pecans, and flax seeds in a large bowl.
  3. 3. In another bowl, mix the applesauce, pumpkin puree, vanilla, maple syrup, brown sugar, ground coffee, salt and pumpkin pie spice.
  4. 4. Gently stir the wet ingredients into the dry ingredients. Drizzle with oil until evenly coated.
  5. 5. Spread on a foil-lined baking sheet and bake for 35-40 minutes, stirring every 10 minutes, until golden brown.
