Pumpkin Chocolate Snacking Cake
- 1/2 cups Pureed Pumpkin (no Spices)
- 1 whole Egg
- 2 Egg Whites
- 1 Tablespoon Vegetable Or Canola Oil
- 1 cup Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Cocoa Powder
- 1/2 teaspoons Ground Cinnamon
- 1/2 teaspoons Ground Allspice
- 1/4 teaspoons Ground Nutmeg
- 1/4 teaspoons Salt
- 2/3 cups Brown Sugar, Packed
- 1/3 cups Chocolate Chips
- 1. Preheat oven to 350 F.
- 2. Spray a 9x13 pan with cooking spray and set it aside.
- 3. In a large bowl, combine pumpkin puree, eggs, egg whites and oil and mix until smooth. Set aside.
- 4. In another bowl, mix together the flour, baking powder, cocoa powder, spices, salt and brown sugar.
- 5. Add dry ingredients into the wet ingredients and mix thouroughly, but try not to overmix. Stir in the chocolate chips.
- 6. Pour into prepared pan and spread evenly. Bake for 15-25 minutes. You want a toothpick to come out clean when you poke into it. Then you know it's done.
- 7. Cool completely and then devour!
