Pumpkin Pie Oatmeal
- FOR THE OATMEAL:
- 2/3 cups Old Fashioned Oats
- 1 cup Water
- 2/3 cups Canned Pumpkin
- 1/3 cups Almond Milk
- 2 teaspoons Ground Cinnamon
- 1/4 teaspoons Nutmeg
- 1/2 teaspoons Ginger
- 2 teaspoons Stevia
- FOR THE TOPPING:
- 1-1/2 Tablespoon Whole Wheat Flour
- 1/4 cups Nuts (pecans Or Walnuts)
- 1/2 teaspoons Oil
- 1 Tablespoon Light Maple Syrup
- Preheat your oven to 350u0b0F.
- In a medium-sized microwave-safe bowl combine oats and water. Microwave on high for 2 minutes. Stir in pumpkin, almond milk, cinnamon, nutmeg, ginger and stevia. Pour equally into two 6-inch ramekins.
- In a small bowl combine flour, nuts, oil and maple syrup until it forms crumbles. Sprinkle crumbles over pumpkin oatmeal.
- Bake for 15-20 minutes. Then remove the ramekins from the oven and let oatmeal cool 5 minutes before serving .
