Drunken Pumpkin Bread

  1. Preheat oven to 350 F.
  2. Combine wet ingredients (pumpkin through eggs) in a large stand mixer bowl then mix to combine. Add sugars, baking soda, salt, and spices and mix thoroughly.
  3. Mix in flour 1 cup at a time until thoroughly blended. Stir in raisins.
  4. Divide batter equally into 2 greased 9-inch loaf pans. Bake at 350 F for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  5. Cool before slicing. Makes 2 loaves.
