Mama'S Fruit Cake
- 1 large container fruit cake mix (candied fruit)
- 1 large can crushed pineapple
- 1 large bottle cherries, chopped (save a few whole to decorate top of cake)
- 1 large can sliced pineapple
- 1 bag coconut
- 1 box raisins
- 1 box mince meat (optional)
- 3 eggs
- 1/3 c. oil
- 1 box Duncan Hines Yellow Cake Mix
- 2 c. self-rising flour
- 1 qt. chopped pecans
- 1 c. pecan halves
- Mix cake according to directions on box in a large bowl. Drain juice from sliced pineapple and cherries into cake mix. Add crushed pineapple. Mix well. In a separate bowl put self-rising flour. Take mixed fruit, chopped pecans, raisins, chopped cherries and mince meat and add to self-rising flour. Coat with flour, then gently fold into cake mix. Put into pans sprayed with Pam. Bake for approximately 1 hour
- in a preheated 350u0b0 oven. After 1 hour turn oven down to 200u0b0 and cook for several hours or until you can stick an ice pick in and it comes out clean.
