Pumpkin Masala (Spiced Pumpkin)
- 3 Tablespoons Oil
- 1 cup Chopped Onion
- 1 Tablespoon Crushed Garlic
- 1 Tablespoon Crushed Ginger
- 2 teaspoons Garam Masala
- 1 Tablespoon Ground Cumin
- 1 Tablespoon Ground Coriander
- 1 teaspoon Turmeric
- 1 teaspoon Cayenne/Red Chili Powder
- 1 Jalapeno, Chopped
- 2 Large Tomatoes, Pureed
- 2 cups Peeled And Cubed Unripe Pumpkin
- 2 cups Water
- 2 teaspoons Salt, Or To Taste
- In a skillet over medium heat, heat oil then add the onions. Saute until slightly golden then add the ginger and garlic. Add the spices and saute on low heat for about 2 minutes stirring constantly. Add the jalapeno and the tomato puree and continue to cook on medium heat, for about 8 minutes. Add the pumpkin pieces. Stir and mix well. Add salt and water. Mix well, cover and cook on medium until pumpkin is fully cooked, about 10-15 minutes. Serve hot with rice!
