Tropical Chopped Salad With Mango, Pineapple And Coconut
- 1/2 cups Uncooked Quinoa
- 4 cups Shredded Red Leaf Or Romaine Lettuce (add An Extra Cup If Desired)
- 1 whole Mango, Peeled, Pitted And Finely Chopped
- 1 cup Finely Chopped Pineapple
- 1 cup Finely Chopped Jicama
- 1 whole Avocado, Peeled, Pitted And Finely Chopped
- 1/2 cups Roasted Unsalted Macadamia Nuts, Roughly Chopped
- 1/2 cups Flaked Unsweetened Coconut, Lightly Toasted
- 2 whole Green Onions, Sliced (add An Extra If Desired)
- Drizzle Of Olive Oil
- 1 whole Lime, Cut Into Wedges
- Cook quinoa according to package directions. Add the cooked quinoa into a large bowl with all the other salad ingredients (everything except the oil and lime juice). Toss and plate it. Drizzle each serving with olive oil and lime juice.
