Raisin Cake
- 1 (15 oz.) pkg. raisins
- 2 c. sugar
- 1 c. butter
- 2 c. boiling water
- 2 Tbsp. soda
- 1/4 c. warm water
- 2 eggs, slightly beaten
- 4 1/2 c. flour
- 1/2 tsp. baking powder
- 1 Tbsp. allspice
- 2 tsp. cinnamon
- 1 tsp. cloves
- 2 c. chopped pecans or walnuts
- Combine raisins, sugar, butter and boiling water in a large saucepan; bring to a boil and boil 5 minutes.
- Allow to cool to lukewarm.
- Dissolve soda in warm water; add to raisin mixture. (Mixture will foam.)
- Stir in eggs.
- Combine dry ingredients; gradually add to raisin mixture, stirring after each addition. Stir in nuts.
- Spoon batter into a lightly greased 10-inch tube pan.
- Bake at 375u0b0 for 50 to 60 minutes or until cake tests done. Yields one 10-inch cake.
