Raisin Cake

  1. Combine raisins, sugar, butter and boiling water in a large saucepan; bring to a boil and boil 5 minutes.
  2. Allow to cool to lukewarm.
  3. Dissolve soda in warm water; add to raisin mixture. (Mixture will foam.)
  4. Stir in eggs.
  5. Combine dry ingredients; gradually add to raisin mixture, stirring after each addition. Stir in nuts.
  6. Spoon batter into a lightly greased 10-inch tube pan.
  7. Bake at 375u0b0 for 50 to 60 minutes or until cake tests done. Yields one 10-inch cake.
