Easy Spinach Quiche
- 1 (9-inch) deep dish unbaked pie shell
- 1 tsp. soft butter
- 1 pkg. chopped spinach, cooked and drained
- 1/4 lb. shredded Swiss cheese
- 4 eggs (Egg Beaters may be used)
- 2 c. undiluted evaporated milk
- 1/2 tsp. salt
- pinch of sugar
- nutmeg
- coarsely ground black pepper
- Preheat oven to 350u0b0; rub butter over bottom of unbaked pie shell.
- Combine eggs, milk, salt and sugar; beat until thoroughly mixed.
- Sprinkle pie shell with spinach and cheese.
- Pour milk mixture over spinach and cheese.
- Put a dash of nutmeg and pepper on top.
- Bake approximately 40 minutes on lower oven shelf until custard is set and the top is nicely browned.
- Serve as a luncheon or main dinner dish.
- Serves 4 to 5 people.
