Pumpkin Pie Cookies

  1. Preheat the oven to 350u0b0F.
  2. Combine pumpkin, sugar, egg and vegetable oil in a mixing bowl. Mix until smooth and blended.
  3. Add baking powder, baking soda, salt, cinnamon and vanilla extract; mix well. Add flour and stir well until completely mixed. Pour in chocolate chips and mix.
  4. Drop spoonfuls of batter on a greased cookie sheet. Bake for about 10-12 minutes until they no longer appear gooey.
  5. Yields about 2 dozen cookies depending on the size of your drops.
  6. Note: I made these once with 2 cups of chocolate chips and once with 1 cup. If you want more pumpkin flavor, just go with 1 cup of chips.
