Pumpkin Pie Cookies
- 1-1/2 cup Canned Pumpkin
- 1 cup White Sugar
- 1 whole Egg
- 1/2 cups Vegetable Oil
- 2 Tablespoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 3 teaspoons Ground Cinnamon
- 1 teaspoon Vanilla Extract
- 2 cups All-purpose Flour
- 2 cups White Chocolate Chips (see Note)
- Preheat the oven to 350u0b0F.
- Combine pumpkin, sugar, egg and vegetable oil in a mixing bowl. Mix until smooth and blended.
- Add baking powder, baking soda, salt, cinnamon and vanilla extract; mix well. Add flour and stir well until completely mixed. Pour in chocolate chips and mix.
- Drop spoonfuls of batter on a greased cookie sheet. Bake for about 10-12 minutes until they no longer appear gooey.
- Yields about 2 dozen cookies depending on the size of your drops.
- Note: I made these once with 2 cups of chocolate chips and once with 1 cup. If you want more pumpkin flavor, just go with 1 cup of chips.
