Pumpkin Sandwich Cookies

  1. Preheat oven to 350u0b0F.
  2. In a large bowl, whisk together all the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, salt, and sugar. In a separate bowl, beat together the butter, pumpkin, egg, and vanilla extract and slowly blend in the dry ingredients until well mixed. Spray a cookie sheet with baking spray and drop rounded tablespoonfuls of cookie batter on the sheet and bake for 10 to 12 minutes. Allow to cool completely.
  3. To make the cream filling, beat together the butter, marshmallow, powdered sugar, and salt until creamy. Spread the cream on one of the cookies and place the other cookie on top, making a sandwich, and serve.
