Pumpkin Spice Chocolate Chip Muffins

  1. Preheat oven to 350 F. Line two 12-count standard size muffin pans with 18 muffin liners.
  2. Mix flour, pumpkin pie spice, cinnamon, baking soda, and baking powder in a medium bowl.
  3. In a larger mixing bowl, combine oil, sugar, vanilla, pumpkin puree and eggs. Gently fold dry ingredients into wet and stir until just combined. Fold in chocolate chips.
  4. Distribute batter among baking cups, filling each about 3/4 full. Bake for 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean. Remove from oven and transfer to a wire rack to cool completely before storing.
