Healthier Pumpkin Oatmeal Cookies

  1. Preheat oven to 350u0b0F and line 2 cookie sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, combine oats, flour, almond meal, flax seed meal, baking powder, salt, and pumpkin pie spice.
  3. In a large bowl whisk together oil, honey, sugar, pumpkin, egg, and vanilla. Once smooth, stir in oat mixture and stir just until combined.
  4. Drop by rounded tablespoons onto baking sheets and flatten lightly with a floured fork. Bake for 15 minutes or until bottoms are lightly browned. Let sit for 2 minutes then move to a cooling rack. Store in an airtight container.
