Healthier Pumpkin Oatmeal Cookies
- 1-1/2 cup Old Fashioned Oats
- 1 cup Flour
- 1/4 cups Almond Meal (if You Don't Have This, Just Add The Same Amount Of Additional Flour)
- 1/4 cups Flax Seed Meal
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 2 teaspoons Pumpkin Pie Spice
- 6 Tablespoons Canola Oil
- 1/4 cups Honey
- 1/4 cups Brown Sugar
- 1 cup Canned Pumpkin
- 1 whole Egg
- 2 teaspoons Vanilla
- Preheat oven to 350u0b0F and line 2 cookie sheets with parchment paper or silicone baking mats.
- In a medium bowl, combine oats, flour, almond meal, flax seed meal, baking powder, salt, and pumpkin pie spice.
- In a large bowl whisk together oil, honey, sugar, pumpkin, egg, and vanilla. Once smooth, stir in oat mixture and stir just until combined.
- Drop by rounded tablespoons onto baking sheets and flatten lightly with a floured fork. Bake for 15 minutes or until bottoms are lightly browned. Let sit for 2 minutes then move to a cooling rack. Store in an airtight container.
