Fresh Strawberry Pie(Makes 2 Pies)
- 2 1/3 c. sugar
- 1/3 c. strawberry jello
- 1/4 tsp. salt
- 2 c. water
- 1/2 c. cornstarch, mixed with 1/2 c. water
- 2 Tbsp. lemon juice
- drops of red food coloring
- 2 to 3 pt. fresh whole strawberries
- 2 containers Cool Whip
- 2 (9-inch) baked pie shells
- Bring first 4 ingredients to a boil in pan.
- Turn off heat and add cornstarch.
- Cook on medium until it appears to be partly clear and add lemon juice and food coloring.
- Cool, then spoon part of mixture in shells of the pie crusts.
- Place strawberries in shells and pour rest of mixture over the strawberries.
- (Wash strawberries before and make sure they are dry.)
- When cool, top with Cool Whip or other topping.
