Sparkling Fruit Salad With Champagne Mimosa Dressing
- 1 whole Mango, Peeled, Seeded And Diced
- 1/2 Pineapple, Peeled, Cored And Diced
- 1-1/2 cup Sliced Strawberries
- 1 cup Blueberries
- 1 cup Blackberries
- 1 cup Raspberries
- 3 Kiwi, Peeled And Sliced
- 3 Tablespoons Fresh Chopped Mint
- 1 cup Orange Juice
- 3/4 cups Champagne
- 2 Tablespoons Honey
- 1 Tablespoon Cointreau (optional)
- Place mango, pineapple, strawberries, blueberries, blackberries, raspberries, kiwi and mint in a large bowl. Carefully toss to combine, being careful not to break up the berries. Set aside.
- In a medium bowl, whisk orange juice, champagne, honey and cointreau (if using) to combine. Right before serving, pour the dressing over the salad and toss gently to coat.
