Pumpkin Spice And Almond Granola

  1. Preheat oven to 250 F.
  2. In a large bowl, combine oats, almonds, pepitas (pumpkin seeds), brown sugar and pumpkin pie spice.
  3. In a small bowl, combine syrup, honey, oil, almond extract and salt. Add the wet mixture into the dry and mix well to moisten. Spread mixture onto a rimmed baking sheet, creating a thin, even layer.
  4. Bake for 1 hour and 15 minutes, stirring every 15 minutes so that it browns evenly. Remove pan from oven and set it on a rack. Let granola cool slightly, then mix in the cranberries. Store in an airtight container.
