Pumpkin Spice And Almond Granola
- 1-1/2 cup Rolled Oats
- 1/2 cups Sliced Almonds
- 1/2 cups Pepitas
- 2 Tablespoons Light Brown Sugar, Packed
- 1 Tablespoon Pumpkin Pie Spice
- 1-1/2 Tablespoon Maple Syrup
- 1-1/2 Tablespoon Clover Honey
- 2 Tablespoons Vegetable Oil
- 1 teaspoon Almond Extract
- 1/2 teaspoons Salt
- 1/2 cups Dried Cranberries
- Preheat oven to 250 F.
- In a large bowl, combine oats, almonds, pepitas (pumpkin seeds), brown sugar and pumpkin pie spice.
- In a small bowl, combine syrup, honey, oil, almond extract and salt. Add the wet mixture into the dry and mix well to moisten. Spread mixture onto a rimmed baking sheet, creating a thin, even layer.
- Bake for 1 hour and 15 minutes, stirring every 15 minutes so that it browns evenly. Remove pan from oven and set it on a rack. Let granola cool slightly, then mix in the cranberries. Store in an airtight container.
