Pumpkin Muffins
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1/2 teaspoons Ginger
- 1/2 teaspoons Cinnamon
- 1/2 teaspoons Nutmeg
- 1/4 teaspoons Cloves
- 1/3 cups Butter, Softened
- 1/4 cups Brown Sugar
- 1/4 cups Molasses
- 1/2 cups Milk
- 2 whole Eggs
- 1 cup Pumpkin Puree Or Canned Pumpkin
- 1/2 cups White Chocolate Chips
- 1. Preheat oven to 375 F. Spray a 12 cup muffin tin with cooking spray. Set aside.
- 2. In a medium sized bowl, mix together flour, baking powder, salt and spices.
- 3. In another larger bowl, cream butter and sugar. Add molasses and mix until smooth.
- 4. Add milk, eggs and pumpkin and blend thoroughly. Stir in dry ingredients and blend. Add white chocolate chips and stir until all ingredients are incorporated.
- 5. Fill muffin cups with batter. Bake for 16 to 18 minutes.
