Pumpkin Muffins

  1. 1. Preheat oven to 375 F. Spray a 12 cup muffin tin with cooking spray. Set aside.
  2. 2. In a medium sized bowl, mix together flour, baking powder, salt and spices.
  3. 3. In another larger bowl, cream butter and sugar. Add molasses and mix until smooth.
  4. 4. Add milk, eggs and pumpkin and blend thoroughly. Stir in dry ingredients and blend. Add white chocolate chips and stir until all ingredients are incorporated.
  5. 5. Fill muffin cups with batter. Bake for 16 to 18 minutes.
