Flourless Peanut Butter Pumpkin Brownies
- 1 cup Canned Pumpkin
- 1 cup Creamy Peanut Butter
- 1 whole Egg
- 1/4 cups Sugar
- 1/4 cups Honey
- 1 teaspoon Vanilla
- 1 teaspoon Cinnamon
- 1 teaspoon Baking Soda
- 1/2 cups Enjoy Life Chocolate Chunks
- Optional: Enjoy Life Mini Chocolate Chips For Sprinkling On Top
- 1. Preheat oven to 350 F.
- 2. Combine all ingredients in a mixing bowl (everything except the chocolate).
- 3. Once mixed, add the chocolate chunks (I also threw in a few mini chocolate chips-you know, for good measure) and stir until fully incorporated.
- 4. Pour batter into a greased 8x8 baking dish (I used glass).
- 5. Sprinkle mini chocolate chips on top if desired.
- 6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
