Pineapple Chicken(Diet)
- 1 c. crushed pineapple in its own juice
- 1/4 c. soy sauce
- 1 Tbsp. water
- 1 Tbsp. vinegar
- 2 tsp. prepared mustard
- 2 pkg. artificial sweetener
- 2 large, skinless chicken breasts
- 1/2 tsp. ground ginger
- 1 c. sliced, fresh mushrooms
- In a small saucepan, combine the pineapple, soy sauce, water, vinegar, mustard and ginger.
- Heat until mixture begins to boil. Remove from heat and add sweetener.
- Place chicken in a shallow baking dish.
- Pour marinade over chicken making sure they are well coated.
- Refrigerate at least 2 hours or overnight.
- Bake, covered, at 400u0b0 for 30 minutes.
- Add mushrooms; baste chicken and mushrooms with marinade.
- Continue to bake, covered, for 15 minutes.
- Remove cover and bake 30 minutes more or until chicken is browned and liquid is absorbed; baste during browning.
- Serve over rice or noodles.
