Pineapple Chicken(Diet)

  1. In a small saucepan, combine the pineapple, soy sauce, water, vinegar, mustard and ginger.
  2. Heat until mixture begins to boil. Remove from heat and add sweetener.
  3. Place chicken in a shallow baking dish.
  4. Pour marinade over chicken making sure they are well coated.
  5. Refrigerate at least 2 hours or overnight.
  6. Bake, covered, at 400u0b0 for 30 minutes.
  7. Add mushrooms; baste chicken and mushrooms with marinade.
  8. Continue to bake, covered, for 15 minutes.
  9. Remove cover and bake 30 minutes more or until chicken is browned and liquid is absorbed; baste during browning.
  10. Serve over rice or noodles.
