Beet Salad
- 2 pkg. lemon flavored gelatin
- 2 c. boiling water
- 2 c. shoestring cut beets
- 2/3 c. finely minced onion
- 2 Tbsp. prepared horseradish
- up to 1 tsp. salt
- 3 Tbsp. vinegar
- 1 medium head cabbage, shredded
- 1 medium onion, sliced thin
- 3/4 c. sugar
- 1/2 c. salad oil (originally made without, but this improves it)
- 1 tsp. salt
- 1 tsp. dry mustard
- 1 tsp. celery seed
- 1 tsp. sugar
- 1 c. vinegar
- Layer cabbage and onion in bowl; pour 3/4 cup sugar over.
- Do not mix!
- Combine oil, vinegar, salt, dry mustard, celery seed and sugar in saucepan.
- Let come to a boil.
- Pour hot dressing over cabbage and onion.
- Do not mix!
- Let set in refrigerator for at least 3 hours or overnight.
- (Years ago you set it on the cellar floor.)
- Mix before serving.
