Marshmallow Chocolate Cake
- 2 c. sifted cake flour
- 2 c. granulated sugar
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 1/2 c. soft shortening
- 3 sq. unsweetened chocolate, melted
- 3/4 c. milk
- 1 tsp. vanilla extract
- 1/2 tsp. double-acting baking powder
- 1/2 c. milk
- 3 medium eggs, unbeaten
- Heat oven to 350u0b0.
- Line bottom of three 1 1/2-inch deep (8-inch) layer cake pans.
- Into large mixing bowl, sift together flour, sugar, salt and baking soda.
- Drop in shortening; pour in chocolate, 3/4 cup milk and vanilla extract.
- With mixer at medium speed, beat 2 minutes, scraping bowl and beaters as necessary.
- Add baking powder, 1/2 cup milk and eggs.
- Beat at medium speed for 2 minutes.
- Turn into pans; bake 35 to 40 minutes or until cake tester, inserted in center, comes clean.
- Cool in pans on wire racks about 10 minutes.
- Remove from pans; remove paper and place layers on racks.
