Plum Pudding Cake
- 1 c. all-purpose flour
- 3/4 c. granulated sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. milk
- 3 tsp. vegetable oil
- 2 c. sliced fresh red plums (7 to 8 large)
- 1 c. packed brown sugar
- 1 tsp. ground cinnamon
- 1 c. boiling water
- Heat oven to 350u0b0.
- Mix flour, granulated sugar, baking powder and salt.
- Beat in milk and oil until smooth.
- Pour into ungreased square pan, 8 x 8 x 2-inches.
- Top with plums.
- Mix brown sugar and cinnamon; sprinkle over plums.
- Pour boiling water on plums. Bake 60 to 70 minutes or until toothpick inserted in center comes out clean.
- Serve warm and, if desired, with sweetened whipped cream.
- Makes 6 servings; 410 calories per serving.
