Pumpkin Spice Waffles

  1. Preheat waffle iron according to your model's directions.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In a medium bowl, add brown sugar, pumpkin, egg yolks, yogurt, milk, and vanilla. Beat until combined with an electric hand mixer or stand mixer with fitted paddle attachment.
  4. Pour pumpkin mixture into flour mixture and beat until just combined. Set aside.
  5. In another medium bowl, beat egg whites until stiff, about 3-4 minutes. Gently fold into batter.
  6. Lightly grease waffle iron with nonstick cooking spray, if needed. Add batter and cook until lightly golden brown and cooked through, roughly 3-4 minutes.
  7. Serve immediately with butter and warm maple syrup, if desired. Enjoy!
