Eleven Madison Park Granola
- 2-3/4 cups Rolled Oats
- 1 cup Shelled Pistachios (or Pecans)
- 1 cup Unsweetened Coconut Chips
- 1/3 cups Pumpkin Seeds
- 1 Tablespoon Kosher Salt
- 1/2 cups Light Brown Sugar
- 1/3 cups Real Maple Syrup
- 1/3 cups Extra Virgin Olive Oil
- 3/4 cups Dried Sour Cherries, Chopped
- Preheat oven to 300u0b0F. Line a large baking sheet with parchment paper.
- In a large bowl, mix together oats, pistachios (or pecans), coconut, pumpkin seeds and salt.
- Over low heat, warm sugar, syrup and olive oil in a small saucepan until sugar has just dissolved. Fold liquids into oat mixture, making sure to coat all of the dry ingredients.
- Spread granola mixture on baking sheet. Bake until dry and lightly golden, 40-45 minutes, stirring granola a few times during baking. Remove granola from oven, and mix in the dried sour cherries. Allow to cool to room temperature before transferring to a storage container.
