Caramel Frosting
- 1/2 c. margarine
- 1 c. brown sugar
- 1/4 c. milk
- 2 c. sifted confectioners sugar
- 4 eggs
- 2 c. brown sugar
- 1 c. molasses
- 1 c. strong coffee
- 2 tsp. soda
- 2 tsp. cinnamon
- 1 tsp. cloves
- 2 nutmegs
- 4 c. flour
- 2 lb. raisins
- 1 lb. currants
- 6 oz. candied pineapple
- 6 oz. orange peel
- 3 oz. cherries
- 9 oz. citron
- Cream the shortening until light, adding sugar. Add eggs, beating after each one.
- Add molasses and coffee. Sift flour with spices and 1 teaspoon salt. Stir into creamed mixture. Add fruit and nuts.
- Bake in a large pan at 275u0b0 for 3 hours. Will keep forever.
