Applesauce Pecan Bread
- 2 large eggs
- 1 c. applesauce
- 1 c. sugar
- 1/3 c. vegetable oil
- 3 Tbsp. milk
- 1 tsp. cinnamon, divided
- 1/4 tsp. nutmeg
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. plus 2 Tbsp. flour
- 1 1/4 c. chopped pecans, divided
- 1/2 c. candied fruit
- 1/4 c. packed brown sugar
- candied cherries (to decorate top)
- Beat eggs until foamy.
- Stir in next 4 ingredients.
- Mix together 1/2 teaspoon cinnamon and next 5 ingredients.
- Gradually add to first mixture until well mixed.
- Stir in 1 cup nuts and the fruit.
- Spread in a well-greased 9 x 5 x 3-inch loaf pan.
- Mix remaining nuts, cinnamon and brown sugar and spread evenly over batter and press in a little.
- Bake in a preheated 350u0b0 oven for 1 hour.
- To keep from overbrowning, spread foil over top last half an hour.
- Turn out on side on a rack to cool.
- Can be frozen.
