Coconut Chia Seed Pudding
- 8 Tablespoons Chia Seeds
- 2 cups Coconut Milk Drink
- 1 teaspoon Vanilla
- 1 pinch Salt
- 1/2 teaspoons Cinnamon
- 2 Tablespoons Coconut Shavings
- 1/3 cups Coconut Yogurt
- 1 Tablespoon Agave Syrup, Plus More To Taste If Desired
- 1/2 whole Mango
- Pour chia seeds into the coconut milk drink (not the thick kind from a can but a coconut drink). Cover the bowl with a towel and leave in the fridge overnight, or a minimum of 2 hours.
- Mix seeds. Add vanilla, salt, cinnamon and mix again. (To make it sweeter, add a little bit of agave syrup.)
- Toast coconut shavings in a frying pan. Mix yogurt with agave syrup. Cut mango into cubes.
- Place chia pudding in a glass. Add some fried coconut shavings. Add chopped mango, yogurt and remaining coconut shavings on top. Enjoy!
