Pumpkin Bars With Cream Cheese Frosting
- FOR THE BARS:
- 4 Eggs
- 1-2/3 cup Sugar
- 1 cup Oil
- 15 ounces, weight Canned Pumpkin
- 2 cups Flour
- 2 teaspoons Cinnamon
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- FOR THE FROSTING:
- 8 ounces, fluid Cream Cheese, Softened
- 1 stick Butter
- 1 teaspoon Vanilla
- 2 cups Powdered Sugar
- In a mixer on medium speed, combine eggs, sugar, oil, and pumpkin.
- In a separate bowl, mix dry ingredients: flour, cinnamon, baking powder, baking soda, and salt. Add dry ingredients to the pumpkin mixture. Mix on low speed until combined.
- Pour batter into a greased 9x13 inch pan and smooth out the surface. Bake at 350u0b0F for 30-35 minutes. Let cool completely before frosting bars.
- For the frosting:
- In a mixer over medium speed, combine cream cheese and butter until smooth. Mix in vanilla extract. On low speed, add powdered sugar until completely combined. Spread onto cooled bars.
