Chocolate Chip Marshmallow Cookies

  1. Preheat oven to 350u0b0F.
  2. Beat butter and sugars in stand mixer until creamy. Add vanilla and egg; beat on low speed until just incorporated.
  3. Add flour, baking soda, and salt. Mix until dough forms. Add chocolate chips and stir in with spatula.
  4. Form tablespoon-sized balls of dough, either with a scoop or your hands and place on baking sheet lined with parchment paper. Make a small well in the center of each cookie, and place 1 teaspoon of marshmallow cream. Gently push the sides of the dough balls up to cover up the marshmallow cream.
  5. Bake for 9-11 minutes until cookies start to get golden brown. It is important not to over-bake them. Let cool on the pan for a few minutes before moving them to a cooling rack.
