Best Damn Banana Nut Bread
- 1 cup Sugar
- 1/3 cups Unsalted Butter, Softened
- 2 Eggs At Room Temperature
- 1-1/2 cup Mashed Ripe Bananas
- 1 teaspoon Vanilla
- 2/3 cups Water
- 1-2/3 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoons Baking Powder
- 1/4 teaspoons Nutmeg
- 1/2 teaspoons Cinnamon
- 1/2 teaspoons Salt
- 1/3 cups Chopped Walnuts, Plus More For Top If Desired
- Preheat oven to 350u0b0F. Spray or butter bottom only of an 8 1/2 x 4 1/2 inch loaf pan.
- In a large mixing bowl, cream together sugar and butter with a fork. Stir in eggs until well-blended. Add bananas, vanilla and water to the bowl and blend together with a hand mixer until all large pieces of banana are broken down.
- Add remaining dry ingredients, except nuts, stirring to completely incorporate. Stir in chopped walnuts.
- Pour mixture into pan and sprinkle with chopped walnuts, if desired. Start checking bread at 50 minutes. Continue checking every 8 minutes until a wooden pick or cake tester comes out of the center of the bread clean.
- Let bread cool for at least 15 minutes before trying to remove from pan. (Good luck with that!)
- Notes:
- 1. Walnuts can be substituted for any nut of your liking like pecans or macadamia nuts, or omitted if desired
- 2. Check your Banana Nut Bread at the 40 minute mark. If it looks like it may be getting too brown, place a sheet of aluminum foil on the top of the loaf pan through the end of cooking.
