Chile And Coffee Rubbed Steak
- 2 Tablespoons Packed Brown Sugar
- 1 Tablespoon Instant Coffee
- 1 teaspoon Unsweetened Cocoa Powder
- 1 teaspoon Mustard Powder
- 1 teaspoon Ancho Chile Powder
- 1/8 teaspoons Ground Cinnamon
- 2 Large Ribeye Steaks
- Kosher Salt
- Vegetable Oil
- Combine sugar, coffee, cocoa powder, mustard powder, ancho chile powder, and cinnamon in a bowl. Rub between fingers until fine. Season both sides of the steak with salt, then generously rub with coffee-spice mixture.
- Heat a small amount of vegetable oil in a large cast-iron skillet or grill over medium heat. Wait until pan or grill is hot and sear steak, 4 to 6 minutes per side for medium rare.
