Mexican Tortilla Breakfast
- 1 (8 oz.) pkg. sausage links
- 1/2 c. onion, finely chopped
- 1/4 c. green pepper, finely chopped
- 1/4 c. celery, finely chopped
- 1 tsp. chili powder
- 1 tsp. oregano
- 1/2 tsp. salt
- 2 tsp. sugar
- 1 (8 oz.) can stewed tomatoes, chopped (reserve juice)
- 4 flour tortillas
- 4 medium eggs
- salt to taste
- pepper to taste
- 1 c. Monterey Jack cheese, shredded
- Cut sausage links into 1/4-inch pieces and brown in skillet on medium heat.
- Remove and drain.
- In skillet, saute onion, green pepper and celery until tender.
- Stir in chili powder, oregano, salt, sugar and juice from tomatoes.
- Add tomatoes and sausage. Mix well.
- Simmer, uncovered, to thicken.
